Spiced Clementine and Cranberry Spritz
INGREDIENTS
1 ½ oz chilled Iceberg Vodka
1 oz spiced clementine syrup see recipe
10 fresh cranberries or thawed from frozen
2 oz cranberry juice
2 -3 oz Ginger beer
1 Sugared rosemary and cranberry skewer or garnish*
1 Bruleed orange slice*
For Spiced Clementine Syrup
1 cup cane sugar
¾ cups water
4 clementine’s, sliced
2 cinnamon sticks
DIRECTIONS
To a shaker add syrup and fresh cranberries. Muddle cranberries to a fine pulp. Fill shaker with ice; add vodka and cranberry juice. Shake 5-10 times.
Strain over prepared glass filled with ice. Top with ginger beer. Garnish with a skewer and bruleed orange slice.
Lightly sugar a thin slice of clementine. Using a brulee torch caramelize the sugar creating a candied surface. Allow to cool before handling.
brush fresh rosemary and cranberries with syrup. Allow syrup to get tacky, 3 minutes. Dust or roll rosemary and cranberries in sugar to coat. Dry before using, roughly 10 minutes.
For Spiced Clementine Syrup
In a small pot add syrup ingredients.
Bring to a gentle boil and reduce heat to medium low. Simmer for 25 minutes.
Remove from heat and strain liquid through a fine mesh sieve into a 12 oz mason jar.
Allow syrup to cool completely before using. Store sealed for up to 2 months.
