Rhubarb and Elderflower Spring Splash
INGREDIENTS
1 1/2 oz Iceberg Vodka
3/4 oz St-Germain elderflower liqueur
2 oz rhubarb puree *see recipe
1/2 oz fresh orange juice
3 oz sparkling brut
Rhubarb ribbons
Fresh mint leaves
Rhubarb Puree
1/4 cup cane sugar
1/2 cup water
1 tbsp. lemon juice
1 cup chopped fresh rhubarb
DIRECTIONS
Into a chilled wine glass add Iceberg Vodka, elderflower liqueur, rhubarb puree and orange juice.
Fill glass with ice and top with sparkling brut. Stir and garnish with rhubarb ribbons and fresh mint.
Rhubarb Puree
In a small pot over medium heat, simmer all ingredients until rhubarb is soft, 15 minutes.
Remove from heat. Over a bowl, press mixture through a fine mesh sieve.
Let puree cool completely and store in the refrigerator in an airtight container.
